Smoking mussels

Usually on a food shoot the star of the show has so much “handling” that the only place for the finished plate is in the bin!

On a recent food shoot for the Independent Review at Blackwood Restaurant in Edinburgh I was lucky enough to get to try the fruits of the chef’s labour once I’d finished photographing…. Smoked mussels in a white wine sauce with chilli, thyme, garlic etc etc.

The photos needed to show the cooking process featuring the Josper smoking oven and not the finished plate so once the cooking was complete the eating could begin. I’m always a succor for mussels and these one’s were fabulous.
